Lemon Bread
Lemon Bread is an moderately easy dinner. Made with 1/2 c. shortening (part butter or margarine), 2 c. sugar, grated rind from 2 lemons, 4 eggs and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Cream shortening, 2 cups sugar and lemon rind.
Add eggs one at a time, beating well after each addition.
Add sifted flour, salt and baking powder with milk to creamed mixture, beating well. Bake in 2 small 8 x 4 x 2-inch loaf pans at 350Β° for 40 minutes or until tests done with a toothpick.
Remove from pan.
Combine 1 cup sugar with juice from the two lemons and spread on loaves while still hot.
Let stand a day or two before serving.
They also freeze well.
