Lemon-Blueberry Fluff
Lemon-Blueberry Fluff is an moderately easy dinner. Made with 1 (3 oz.) pkg. lemon-flavored gelatin, 1 c. boiling water, 1/4 tsp. grated lemon peel, 2 tbsp. lemon juice and 3/4 c. cold water, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

In large bowl dissolve gelatin in boiling water.
Stir in lemon peel, lemon juice and 3/4 cup cold water.
Chill until partially set.
Add unbeaten egg whites to gelatin mixture.
Beat with electric mixer until mixture is light and fluffy, about 1 to 2 minutes.
Pour into 8 (5-ounce) custard cups.
Chill until firm. (Slight separation into layers may occur.)
