Lazy Daisy Cake
Lazy Daisy Cake is an moderately easy dinner. Made with 3 large eggs, 1 c. sugar, 1 tsp. vanilla, 1 c. flour and 1 tsp. baking powder, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Beat eggs until thick.
Add sugar gradually, beating constantly.
Add vanilla.
Sift together flour and baking powder; add to mixture and mix well.
Heat to boiling point milk and butter, add all at once to mixture.
Beat well.
Do not add any more flour to batter, it is very thin.
Bake at 350Β° for 30 to 40 minutes.
When cake is done, remove from oven and spread with blended mixture of melted butter, brown sugar and cream. (Optional:
Walnuts and/or coconut.)
Place under broiler until topping bubbles up.
Remove to cool.
