Large Pot Brunswick Stew
Large Pot Brunswick Stew is an moderately easy dinner. Made with 14 hens, 3 lb. middling meat (bacon), 8 lb. hamburger, 8 lb. onions, chopped and 35 lb. potatoes, chopped, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
In an iron pot, outside, cook hens and middling meat until half done.
Add hamburger and onions; continue cooking until hens are done.
Add potatoes and cook to pieces, then add tomatoes and butter beans.
Cook stew until well done.
Add corn and butter; cook until corn is done.
Season in the beginning and throughout the cooking.
Cook the stew to desired thickness (approximately 7 hours cooking time).
