Lap Cakes
Lap Cakes is an impressive dinner. Made with 16 oz. candied cherries, chopped, 16 oz. candied pineapple, chopped, 1 box raisins or chopped dates, 2 qt. chopped pecans and 1 c. flour, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Mix candied fruits, raisins or dates and pecans with 1 cup flour; set aside.
Mix melted chocolate, syrup and sugar.
Add beaten eggs.
Add cinnamon, allspice, ground cloves, nutmeg, baking soda and salt.
Add enough flour so mixture will not run. Now, add fruits and nuts.
Dough will now be thick.
Spread dough to 1/2-inch thickness in greased and floured pans; pat down with hand dipped in water.
Bake at 350Β° for 25 minutes.
Remove from pans; serve while still hot.
Edges will be hard, but will soften when stored tightly covered.
