Lamb Stew
Lamb Stew is an moderately easy dinner. Made with 2 or 3 lb. lamb cubes with bone, 1/2 gal. boiling water, salt and pepper to taste, 8 potatoes, peeled and diced and 1 medium onion, peeled and diced, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Place meat in brazier; season with salt and pepper.
Cover with water.
Place over high heat and bring to boil.
Stir and boil 5 to 8 minutes.
Remove scum.
With a clean, damp towel, wipe residue from inside of pot.
Simmer 1 hour.
Wash and drain vegetables.
Add boiling water to meat; add vegetables.
Season with salt, pepper and parsley.
Cover; bring to boil.
Reduce to simmer about 1 1/2 hours.
Thicken with flour or cornstarch. Serve.
