Cook hen or fryers with salt and pepper.
Simmer until the meat falls off the bones; remove bones.
Cut meat in bite size pieces.

Amount of broth, simmer onions and pepper until tender.

Line a large baking dish with 6 tortillas.
Pour 1/2 of chicken mixture and top with 1/2 pound Velveeta cheese.
Repeat, topping with last 1/2 pound cheese.
