Kim's Chicken Salad(Serves 6)
Kim'S Chicken Salad(Serves 6) is an moderately easy dinner. Made with 4 c. chopped cooked chicken halves, cooked in water about 40 minutes, 1 1/2 c. celery, 2 tbsp. lemon juice, 1 1/2 tbsp. italian salad mix (good seasons dry mix) and 1/3 c. mayonnaise, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Combine chicken, celery and lemon juice and chill well. Combine mayonnaise, sour cream and salad dressing mix (use dressing sparingly or to taste); cover and chill 2 to 3 hours.
Add green grapes and mandarin oranges before serving.
If salad is too dry, add juice from oranges.
Serve on lettuce bed with 1 cantaloupe sprinkled with sugared almonds.
