Jody's Peanut Brittle
Jody'S Peanut Brittle is an moderately easy dinner. Made with 1 1/2 c. sugar, 1/2 c. karo, 1/3 c. water, 2 or 3 c. peanuts and 2 tbsp. butter, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Combine sugar, Karo and water in iron skillet.
Cook over medium-high heat until vigorously boiling.
Add peanuts gradually so as not to reduce the boiling.
Cook until peanuts begin to pop. Add butter and cook until nuts are brown and mixture is caramel colored, stirring constantly.
Remove from heat.
Stir in soda and salt.
Pour onto large, heavy-duty aluminum foil and spread thinly.
When cool, break into pieces.
