Jewel Fruit Cake
Jewel Fruit Cake is an impressive dinner. Made with 1 1/2 c. raisins, 1/4 c. water, 1/2 c. shortening, 1/2 c. sugar and 1 egg, well beaten, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Simmer raisins and water for 3 minutes, just until water is absorbed.
Cream shortening with sugar.
Blend in egg.
Dissolve the soda with the hot water, add this to applesauce and blend into creamed mixture.
Sift together flour, nutmeg, cinnamon and salt. Add in gumdrops and nuts.
Blend this into creamed mixture; add cooled raisins.
Pour into greased and lined (3 thicknesses of wax paper) loaf pans.
Bake at 300Β° for 1 3/4 hours.
Cut when cool.
