Jellied Beet Salad
Jellied Beet Salad is an moderately easy dinner. Made with 1 lb. can diced beets, 1 (3 oz.) pkg. orange and lemon jello, 3/4 tsp. salt, 1 c. boiling water and 2 tbsp. vinegar, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Drain beets.
Measure liquid and add enough cold water to make 3/4 cup.
Dissolve gelatin and salt in boiling water.
Add beet liquid, vinegar, horseradish, pepper sauce and minced onion.
Chill until thick.
Fold in beets, celery and pineapple.
You can mold as a sheet or in 8 individual molds.
Serves 8.
