Japanese Pasta Salad
Japanese Pasta Salad is an moderately easy dinner. Made with 8 oz. vermicelli, 1 cucumber, thinly sliced, 1/2 tsp. salt, 1/4 lb. mushrooms, thinly sliced and 1 c. cherry tomatoes, halved, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Cook noodles until barely tender to bite (approximately 9 minutes).
Drain, rinse with cold water and drain again.
Cut noodles in short strands.
Mix with dressing and chill it overnight.
The next day, mix cucumber with salt and let stand for approximately 20 minutes.
Rinse well; drain.
Mix with noodles, mushrooms, tomatoes, shrimp and onion.
