Jambalaya
Jambalaya is an impressive dinner. Made with 4 tbsp. bacon grease, 4 tbsp. flour, 2 tbsp. worcestershire sauce, salt and pepper and 1 bell pepper, chopped, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Make roux.
Add flour to hot bacon drippings over medium heat, stirring continually, until flour is dark brown.
Do not burn! Add the Worcestershire sauce, salt, pepper, bell pepper, onions, scallions, parsley and garlic.
Cook until soft, stirring constantly.
Add water and rice; stir until comes to a boil. Cover; decrease to simmer until rice is cooked.
In a frying pan, saute sausage, chicken and ham in butter until cooked.
Add meat to cooked rice mixture.
Simmer for 2 hours, stirring and adding additional liquid (1 cup chicken bouillon) as needed.
Serves 10 to 12.
