Jam Cake
Jam Cake is an impressive dinner. Made with 2 c. flour, 1/2 c. flour, 1 c. raisins, 1 c. candied cherries and 1 c. pecans, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Beat egg yolks first.
Cream sugar and shortening.
Add egg yolks.
Add dry ingredients (except 1/2 cup flour) alternating with buttermilk to which soda has been added.
(Let soda rise to top of cup.)
Dredge fruits in 1/2 cup flour.
Add to mixture. Fold in beaten egg whites last.
Bake at 225° for 30 minutes, then bake at 325° for 1 hour.
