Jalapeño Sausage Corn Bread
Jalapeño Sausage Corn Bread is an moderately easy dinner. Made with 1 c. plus 1 tbsp. yellow corn meal, divided, 1 c. milk, 2 eggs, 3/4 tsp. salt and 1/2 tsp. soda, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Combine 1 cup corn meal, milk, eggs, salt, soda, bacon drippings and corn in a bowl; mix and set aside.
Saute sausage until lightly browned; drain thoroughly and set aside.
Sprinkle remaining corn meal in a greased 10-inch iron skillet; pour half of corn meal batter into skillet and sprinkle with sausage.
Top with onion, then cheese.
Add pepper evenly on top; pour remaining batter on top.
Bake at 350° for 50 minutes or until brown.
