Jalapeño Corn Bread
Jalapeño Corn Bread is an moderately easy dinner. Made with 2 lb. hamburger, fried and drained on paper towels, 2 lb. american cheese, grated, 2 large chopped onions, 1 c. jalapeño peppers, fresh or canned, chopped and 2 c. yellow cornmeal, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Combine cornmeal, eggs, corn, bacon drippings, soda and salt. Pour light level of batter in bottom of 10 x 15-inch pan.
Next, add cheese.
Layer in meat and jalapeños.
Add remaining batter on top.
Bake at 375° for 40 minutes.
Can be halved and baked in 2 smaller pans.
