Italian Squash Bites
Italian Squash Bites is an moderately easy dinner. Made with 8 (1-inch) slices yellow squash (about 3 medium), 8 (1-inch) slices zucchini (about 2 small), vegetable cooking spray, 3 tbsp. tomatoes, peeled, seeded and diced and 2 tbsp. diced yellow bell pepper, this recipe delivers authentic, satisfying flavors. Place sliced yellow squash and zucchini in a vegetable steamer over boiling water.
Cover and cook 3 minutes.
Drain and let cool.
Scoop out pulp with small end of melon baller to within 1/4-inch of bottom of each shell.
Discard pulp.
Invert squash shells on paper towels.
Set aside.
