Italian Ragout
Italian Ragout is an moderately easy dinner. Made with 1 lb. sweet or hot sausage, 2 green peppers, chopped, 1 onion, chopped, 1 small pkg. mushrooms, sliced and 2 (16 oz.) cans stewed tomatoes, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Saute sausage (without casing) in olive oil.
Add peppers, onion and mushrooms.
Saute until onion is translucent and other vegetables are tender.
Pour sauteed mixture into large saucepan. Add stewed tomatoes and squash.
Simmer until squash is tender. Serve over rice or pasta or with Italian bread.
