Italian Quiche
Italian Quiche is an moderately easy dinner. Made with 11 ry-krisp crackers (any flavor), crushed to 3/4 c., 3 tbsp. magarine, melted, 1/4 c. zucchini, finely chopped, 1/2 c. (2 oz.) mozzarella cheese, shredded and 3 eggs, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Preheat oven to 350Β°.
Grease 8-inch pie plate.
In small bowl, combine crackers, margarine and zucchini.
Press into bottom and sides of pie plate.
Sprinkle with cheese.
In medium bowl, beat eggs.
Stir in yogurt, tomato and seasonings.
Pour over cheese.
Bake for 30 minutes or until set.
Let stand 5 minutes before cutting.
