Italian Potato Salad
Italian Potato Salad is an moderately easy dinner. Made with 3 lb. potatoes, cooked and cooled, 1/3 c. italian salad dressing, 4 hard-boiled eggs, chopped, 3/4 c. celery, chopped and 1/3 c. onion, chopped, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Peel and chop cooked potatoes.
Place in a large bowl.
Add dressing and toss to coat.
Cover and chill for 2 hours.
Add eggs, celery, onion, cucumbers and green peppers.
Mix well.
In a small bowl, combine mayonnaise, sour cream and horseradish; mix well.
Pour over potato mixture and toss.
Chill at least 1 hour. Top with chopped tomatoes.
