Italian Cream Cake
Italian Cream Cake is an moderately easy dinner. Made with 1 stick margarine (room temperature), 2 c. sugar, 1 (8 oz.) can coconut, 5 eggs, separated and 1 tsp. soda, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Cream margarine, Crisco and sugar well.
Add egg yolks 1 at a time (beat well after each addition).
Sift soda and flour together.
Add to creamed mixture alternating with buttermilk.
Beat in coconut, nuts and vanilla.
Beat egg whites until stiff and then fold into cake mixture.
This will make 3 layers.
Bake at 350Β° for 25 minutes.
