Italian Cream Cake
Italian Cream Cake is an moderately easy dinner. Made with 2 c. sugar, 1/2 c. margarine, 1/2 c. crisco shortening, 5 large eggs and 2 c. flour (all-purpose or cake flour), this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

In large bowl, cream together sugar, margarine and shortening, then add 1 egg at a time, mixing after each egg.
Sift flour and soda together and add to mixture.
Add the buttermilk and mix well.
Stir in coconut, pecans and vanilla.
Bake in three 9-inch cake pans, greased and floured.
Bake at 350Β° for 30 to 40 minutes.
Remove from oven.
Cool on rack for 15 minutes.
Frost while still warm.
