Irish Potato Pie
Irish Potato Pie is an moderately easy dinner. Made with 2 lb. cooked white potatoes, 1 1/4 lb. sugar, 1 c. heavy cream, 1 1/2 heaping tsp. baking powder and 2 lemons, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Put cooked potatoes through strainer.
Add butter while hot. Add sugar, salt, cream and eggs; mix thoroughly.
Add baking powder and enough milk to make a medium batter.
Season to taste with lemon juice and grated rind of lemon, lemon extract, vanilla and nutmeg.
Pour into pan lined with thin pie crust.
Makes 2 large or 3 medium pies.
Bake at 375Β° for about 45 minutes.
