Irish Potato Casserole
Irish Potato Casserole is an moderately easy dinner. Made with 8 to 10 medium potatoes, 1 (8 oz.) pkg. cream cheese (room temperature), 1 (8 oz.) carton sour cream, 1/2 c. butter or margarine, melted and 1/4 c. chopped chives, this recipe delivers authentic, satisfying flavors. Cook potatoes until soft, drain and mash.
Beat cream cheese until smooth.
Add potatoes and remaining ingredients except paprika; beat until combined.
Spoon into buttered casserole. Sprinkle paprika.
Cover and refrigerate overnight.
Remove from refrigerator 15 minutes before baking.
Bake at 350Β°, uncovered, for 30 minutes or until hot.
