Irish Coffee Pudding
Irish Coffee Pudding is an moderately easy dinner. Made with 2 envelopes unflavored gelatin, 1 c. sugar, divided, 1/4 tsp. salt, 3 tbsp. irish cream gourmet coffee and 8 eggs, separated, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Mix gelatin, 1/2 cup sugar, salt and coffee in the top of a double boiler.
Beat egg yolks and water together.
Add gelatin mixture.
Cook over boiling water, stirring constantly until gelatin is dissolved.
Remove from heat; stir in vanilla.
Beat egg whites until stiff.
Beat in remaining sugar.
Fold into gelatin mixture.
Top with whipped cream, when chilled.
