Iranian Spinach
Iranian Spinach is an moderately easy dinner. Made with 1/4 tsp. baking powder, 4 eggs, 1 large onion, diced, 1/8 c. vegetable oil and 2 tbsp. flour, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Pour oil in skillet.
Saute onion.
Drain spinach (squeeze if necessary to get out liquid).
Mix beaten eggs, salt, pepper, spinach and onion.
Add flour to thicken.
Pour into remaining oil in skillet.
Spread evenly.
Cook slowly one side, then turn to cook other side.
Sprinkle with Parmesan cheese before serving.
