Indian Pudding
Indian Pudding is an moderately easy dinner. Made with 4 c. milk, 1/3 c. cornmeal, 1/4 c. sugar, 1/2 tsp. cinnamon and 1/2 tsp. nutmeg, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Scald 3 cups of boiling water in top of double boiler.
Add cornmeal, sugar, spices, salt, molasses and butter.
Cook over boiling water, stirring constantly, until mixture thickens, approximately 20 minutes.
Pour into greased baking dish.
Add remaining cup of milk, without stirring.
Bake about 2 to 3 hours in 300Β° oven (slow).
Serve warm with milk, cream or ice cream. Makes 8 servings.
