Icebox Pickles
Icebox Pickles is an moderately easy dinner. Made with 6 c. cukes, sliced thin and unpeeled, 1 c. onions, sliced thin, 1 c. green peppers, sliced (can use 1/2 red), 1 tbsp. salt and 1 c. vinegar, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Mix the first 4 ingredients and refrigerate at least 2 hours.
Drain off all excess liquid.
Pour the next 3 ingredients over the cukes.
In refrigerator overnight. Then put in jars and refrigerate.
Will keep 6 to 9 months.
