Icebox Fruit Cake
Icebox Fruit Cake is an moderately easy dinner. Made with 1 lb. box ritz crackers, 1 lb. candied cherries, 1 lb. candied pineapple, 1 lb. white seedless raisins and 1 lb. pecans, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Crush crackers; add finely chopped fruit and nuts, then coconut.
Melt marshmallows in milk over low heat.
Add to cracker mixture.
Mix well and pack in sprayed loaf pans or roll into 6 x 1 1/2-inch size rolls and wrap in Saran Wrap.
Keep in refrigerator or freeze until ready to serve, slice thin.
