Icebox Cheesecake is an moderately easy dinner. Made with 1 box lemon jell-o, 1 c. hot water, 3/4 c. sugar, 1 lemon and 1 tsp. grated lemon rind, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Mix Jell-O, hot water and 1/2 cup sugar.
Chill in refrigerator until partially congealed.
Mix 1/4 cup sugar, vanilla, juice of 1 lemon and grated lemon rind (or 1/4 cup lemon juice) with 1 package cream cheese.
Chill and whip evaporated milk.
Add Jell-O mixture and beat.
Add cream cheese mixture.
