Hunters Gumbo
Hunters Gumbo is an moderately easy dinner. Made with 5 to 6 yellow summer squash, 4 green or red bell peppers, 3 jalapeño green peppers, 12 to 15 fresh peeled tomatoes or 1 qt. canned tomatoes and 2 lb. fresh mushrooms, this recipe delivers authentic, satisfying flavors. Place squash, peppers and tomatoes in large kettle.
Cook on low for 1 hour.
Flour meat and brown in bacon drippings along with onion.
Add to kettle.
Simmer another hour.
Add mushrooms and seasonings.
Cook until liquid is reduced to consistency of stew.
Serve with mashed potatoes or rice and corn bread.
Serves 6 to 8.
