Huguenot Torte

In a bowl, beat eggs until frothy and lemon-colored.
Add sugar, flour, baking powder and salt.
Mix until smooth.
Stir in apples, pecans and vanilla.
Mix well.
Put mixture in a buttered 12 x 8-inch baking pan.
Bake at 325Β° for about 45 minutes or until crusty and brown on top.
Serve with vanilla ice cream. Serves 6.
