Hot Frito Dip
Hot Frito Dip is an moderately easy dinner. Made with 4 oz. butter or margarine (1 stick), 3 large onions, chopped, 3 cloves garlic, chopped, 3 (4 oz.) cans chopped green chilies and 2 large cans whole tomatoes (48 oz.), this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Chop onions and garlic into semi-fine pieces.
Saute onions and garlic in butter.
Add 3 cans chopped green chiles.
Drain whole tomatoes through a colander until almost dry.
Add to onions and garlic.
Cover and simmer one hour.
Cut up Velveeta cheese and stir in until melted.
Remove from heat.
Divide into several servings.
Freeze excess.
Can be defrosted and reheated in microwave.
Serve with white tortilla chips for dipping.
