Hot Alaska Salmon Melts
Hot Alaska Salmon Melts is an moderately easy dinner. Made with 1 (15 1/2 oz.) can alaska salmon, 1/3 c. mayonnaise, 2 tbsp. each minced parsley and onion, 2 tbsp. drained, chopped pimiento and 2 tsp. lemon juice, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Drain salmon; break into large chunks.
Add mayonnaise, parsley, onion, pimiento, lemon juice and pepper.
Toss gently to mix.
Fold in 1/2 cup cheese.
Spread about 1/4 cup mixture on each slice of bread.
Sprinkle remaining cheese over salmon mixture.
Broil about 6 inches from heat 3 to 4 minutes or until cheese melts and tops are golden.
Makes 6 to 8 servings.
