Hopping John
Hopping John is an easy dinner. Made with 2 c. (1 lb.) dried black-eyed peas, 1 large onion, chopped, 2 lb. hot sausage or mix 1 mild and 1 hot and 1 c. rice, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Cook peas according to directions.
Cook sausage and onions in skillet and add black-eyed peas and uncooked rice onto mixture. Continue to cook for 1 to 1 1/2 hours.
Serve with cornbread. Really good!
Minute rice can be used.
As water as needed and also seasoning.
