Homestead Breakfast
Homestead Breakfast is an moderately easy dinner. Made with 2 large boiled potatoes, 6 slices bacon, 1 onion, chopped, 6 eggs and 1/4 c. milk, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Fry bacon until crisp and pour off some of the fat.
Add onion and fry for a few minutes.
Dice potatoes and add to bacon.
Fry until browned.
Beat eggs a little.
Add milk, salt and pepper. Pour over potato mix.
Cook, stirring often, until eggs are set. Very filling!
This will hold them until lunch.
