Holiday Yam Bake
Holiday Yam Bake is an moderately easy dinner. Made with 1 (40 oz.) can yams, drained and mashed well, 1 (8 1/2 oz.) can crushed pineapple (and juice), 2 tbsp. light brown sugar, 2 tbsp. butter, melted and 3 tbsp. chopped pecans, this recipe delivers authentic, satisfying flavors. Drain pineapple.
Reserve juice. Add juice to yams, sugar and butter.
Beat well. Stir in pineapple and pecans.
Grease 1 1/2-quart casserole. Spoon in mixture. Bake 20 minutes at 350Β°. Sprinkle with marshmallows. Bake 10 minutes longer.
Serves 8.
