Hens Reggae
Hens Reggae is an moderately easy dinner. Made with 2 c. chicken broth, 1 can cream of chicken soup, undiluted, 1 1/2 c. (10 oz. pkg.) yellow rice with saffron seasoning, 2 green onions, chopped and 2 cornish hens, split in half lengthwise, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Spray a 3-quart casserole well with a nonstick spray.
Whisk broth and soup until smooth.
Stir in rice and onion and mix well. Remove fatty pads and skin, if desired.
Arrange hens, cut side down on top of rice mixture.
Season with salt and pepper.
Spray a sheet of tinfoil and cover the casserole dish.
Bake at 350Β° for 1 1/2 hours.
