Healthy Heros
Healthy Heros is an moderately easy dinner. Made with 3/4 c. thinly sliced fresh mushrooms, 1/2 c. seeded and chopped cucumber, 1 tbsp. sliced green onion, 1 clove garlic, minced and 2 tbsp. balsamic vinegar, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Combine first 6 ingredients; let stand 30 minutes.
Slice bun in half lengthwise; pull out soft inside of top and bottom, leaving a shell.
Spoon mushroom mixture into each half of bun; cover with a lettuce leaf.
Top with ham, turkey and tomato slices.
Sprinkle with shredded cheese and serve.
