Health Pudding is an moderately easy dinner. Made with 1 can crushed pineapple with juice, 1 c. raisins, 1 c. dates, 2 c. cooked diced carrots and water and 2 egg whites, lightly beaten, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Simmer all fruit and vegetables for approximately 15 minutes. Combine 1 cup water from vegetables and fruit with starch, spices, sugar and egg whites.
Add to vegetables and fruit.
Continue simmering and stirring until thickened.
