Health Muffins
Health Muffins is an impressive dinner. Made with 2 c. boiling water, 5 tsp. baking soda, 1 c. oil, a little cinnamon, nutmeg, vanilla and ginger (optional) and 2 c. sugar, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Add boiling water to soda, then add oil and any spices.
Cool to lukewarm.
Now add sugar and eggs; mix well. Set aside. Combine flour, cereals, wheat germ, raisins and nuts in a huge bowl.
Pour in lukewarm mixture, then add buttermilk.
Stir only enough to moisten. Batter will keep in sealed container for up to 6 weeks in refrigerator or bake muffins and freeze.
Bake at 375Β° for 20 minutes. Fill muffin tins to 2/3 full only.
