Harriett's Broccoli Cornbread
Harriett'S Broccoli Cornbread is an moderately easy dinner. Made with 2 sticks margarine, melted, 4 eggs, 1 (10 oz.) pkg. chopped broccoli, thawed, 1 medium onion, chopped and 8 or 12 oz. small curd cottage cheese, this recipe delivers authentic, satisfying flavors. Preheat oven to 375Β°.
Melt margarine in a 9 x 13-inch pan. Set aside.
Mix cornmeal mix, eggs, broccoli, onion and cottage cheese; mix well and pour into pan of melted butter.
Spoon melted margarine all over top of cornmeal mixture.
Bake for approximately 30 to 40 minutes, until golden brown.
