Habitant Pea Soup
Habitant Pea Soup is an moderately easy dinner. Made with 2 c. dried yellow peas, 2 qt. plus 1 c. cold water, 1/2 lb. salt pork, blanched, fried and minced, 1 onion, minced and 1/2 c. minced celery, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Pick over peas and soak overnight or according to package directions.
Boil for 10 minutes in water to cover.
Drain; discard water.
Place peas in deep kettle.
Add cold water, salt pork, vegetables, salt and pepper to taste and allspice.
Simmer, covered, over lowest possible heat for 2 to 3 hours.
Makes 6 to 8 servings.
