Gulyásleves
Gulyasleves is a Hungarian paprika beef soup with potatoes, carrots, peppers, and tiny csipetke dumplings. The broth is brick-red, warming, and fragrant with caraway.

Brown the beef with onion until the onion is soft and the meat has color.
Pull the pot from direct heat and stir in paprika and caraway so the spice blooms without scorching.
Add water or broth, tomato, pepper, potatoes, and carrots and simmer until the beef is tender.

Finish with parsley and serve hot with optional sour cream.
