Guam Chicken Salad
Guam Chicken Salad is an moderately easy dinner. Made with 5 large chicken thighs, 5 large chicken breasts, 1 tbsp. salt, 1/2 c. lemon juice and 1 c. grated coconut, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Sprinkle chicken thighs and breasts with salt.
Place in broiler pan or do over charcoal.
Broil for 15 minutes, until chicken is almost cooked.
Turn over and broil another 15 minutes. Chicken should not be thoroughly cooked.
Debone, chop or grind. Mix all ingredients in a bowl.
Chill at least one hour.
Serve with tortillas, crackers or corn chips.
