Green Chile Chuck Roast
Green Chile Chuck Roast is an moderately easy dinner you can prepare in about 1 hour 8 minutes. Made with c. vegetable oil, to 6 lb. chuck roast, large chopped onion, (7 oz.) can chopped green chilies and (12 oz.) can beer, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
In deep skillet or Dutch oven, heat oil hot.
Brown roast on both sides.
Add onion and chilies, turn roast to cover fully with onion and chilies.
Pour beer around side of roast.
Sprinkle with seasonings and cover with tight lid.
Cook 1 1/2 to 2 hours over low heat.
Serves 6 to 8.
