Grandma Connely's Pineapple Salad
Grandma Connely'S Pineapple Salad is an moderately easy dinner. Made with 1 c. pineapple juice (reserve from pineapple), 1 c. sugar, 2 tbsp. flour, 2 eggs, beaten and 1 large can pineapple (tidbits), drained, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Reserve 1 cup of juice from pineapple tidbits when drained. Mix together pineapple juice, sugar, flour and eggs.
Cook over low heat, stirring until thick.
Let mixture cool.
Mix together pineapple tidbits, marshmallows and pecans.
Add cooled pineapple juice mixture.
Stir in 1/2 carton of Cool Whip.
Mix all ingredients together and chill.
