Gourmet Potatoes
Gourmet Potatoes is an moderately easy dinner. Made with 6 medium potatoes, cut into marble size chunks, cooked, drained and cooled, 2 c. shredded cheddar cheese, 1/4 c. butter, 1 1/4 c. sour cream and 1/3 c. chopped green onions, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

In a saucepan over low heat combine Cheddar cheese and butter. Stir occasionally until almost melted.
Remove from heat and blend in sour cream, onion and salt.
Fold in potatoes and turn into a greased 2-quart casserole.
Dot butter; sprinkle with paprika. Bake, uncovered, for 30 minutes at 350Β°.
You can use as stuffing for twice baked potatoes.
