Gondure Rice
Gondure Rice is an impressive dinner. Made with 5 c. white rice, uncooked, 1 (10 1/2 oz.) portuguese sausage, 1 (8 oz.) can tomato sauce, 1/4 c. black olives, pitted and 5 cloves garlic, crushed, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Chop pork and sausage into small pieces; put in a large pot. Add achote oil and fry until brown.
Add onions, garlic and parsley.
Simmer for 5 minutes.
Add tomato sauce, salt and pepper.
Simmer for 5 minutes more.
Add gondure beans and olives. Simmer for 5 minutes.
Add water and bring to a boil.
Then simmer for 15 minutes.
Wash rice, drain and add to sauce mixture. Cook on low heat until rice is cooked.
Stir occasionally.
Makes 10 to 15 servings.
