Golden Carrot Ring
Golden Carrot Ring is an moderately easy dinner. Made with 5 c. grated raw carrots, 4 eggs, 2 c. half and half, 1 tsp. salt and 1/2 tsp. pepper, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Cook carrots in boiling water, then drain thoroughly.
Mix all other ingredients together and combine with carrots.
Spread butter thoroughly over inside of 9-inch ring mold.
Line with greased wax paper, then pour carrot mixture into mold and bake in 325Β° oven for 40 minutes.
Turn onto a large plate and fill center with any other vegetable, such as peas, mushrooms, etc.
Serves 12 to 14 easily for a buffet.
